Sark Food Heroes
The majority of our local suppliers are sole proprietors or small family business concerns. They grow or harvest only small quantities of produce on a strictly non-intensive and sustainable basis. We are grateful for their dedication, commitment and passion, and for providing us with a variety of excellent quality Sark fresh produce depending upon the season. We consider them all to be Sark Food Heroes and they are listed here in no particular order.
The Nightingale family are local dairy farmers. They keep a small herd of Guernsey cows and produce the famously rich Sark milk and distinctively thick Sark dairy cream. From time to time they also provide us with excellent quality local steer beef.
Peter Bonnefin is one of only a handful of local fisherman who are licensed to fish for shellfish in Sark waters. He and his mate pull strings of pots from within the Sark 3-mile territorial waters and provide us with fresh local Sark Lobster on a daily basis.
The Magell family from Le Grand Dixcart are Stocks business partners and also next-door neighbours. They have a substantial, predominantly organic, market garden and they grow a superb variety of fresh herbs and salad materials plus seasonal fruits and vegetables using unique Permaculture principles.
Dominic Wakley and Jared Spong are local fishermen who catch a variety fresh fish from Sark waters. Depending upon the season they land wild Sark Sea Bass, Mackerel, Sole, Skate, Bream, Mullet, Whiting and Pollock to name but a few local varieties.
Gavin Nicolle is a local pig farmer and he supplies us with excellent quality free-range Gloucester Old Spot pork from time to time.
Dave Scott is a local sheep farmer, pig farmer and a tree surgeon! He provides us with excellent quality, locally reared Sark lamb, hogget, mutton and pork depending upon the season. Dave was recently featured in the BBC2 television documentary; An Island Parish.
Phil Long is a Sark man who started his exclusive Sark crab picking business, Pip’s Pickers, in 2015. Phil supplies the hotel with delicious fresh picked Sark caught crab on a daily basis and we feature this in many of our lunch & dinner menus.
***Stocks Hotel on Sark is proud to support local Sark fishermen, Sark farmers and Sark market gardeners. Stocks Hotel aims to try and avoid importing anything into Sark unless it cannot first be sourced from within Sark. This philosophy is vital for the Sark economy and it is also important to minimize our carbon footprint and to limit food miles. We are passionate about using superb, first class, Sark ingredients such as Lobsters, Crabs, Scallops, Sea Bass, Dover Sole, Sark Lamb, Sark Beef, Sark Pork, Sark Eggs, Sark Milk and other Sark dairy products.
