Food Heroes

The majority of our local suppliers are sole proprietors or small family business concerns. They grow or harvest only small quantities of produce on a strictly non-intensive and sustainable basis. We are grateful for their dedication, commitment and passion, and for providing us with a variety of excellent quality SarkFresh produce depending upon the season. They are all Sark Food Heroes and are listed here in no particular order.

The Nightingale family are local dairy farmers. They keep a herd of Guernsey cows and produce the famously rich Sark milk and distinctively thick dairy cream. From time to time they also provide us with excellent quality Aberdeen Angus steer beef.

Peter Bonnefin is one of only a handful of local fisherman who are licensed to fish for shellfish in Sark waters. He and his mate, Kevin, pull strings of pots from within the Sark 3-mile territorial waters and provide us with fresh local Sark Lobster and Sark Chancre Crab on a daily basis.

The Magell family from Le Grand Dixcart are our next-door neighbours and business partners. They have a substantial, predominantly organic, market garden and they grow a superb variety of fresh herbs and salad materials plus seasonal fruits and vegetables.

Jonathan Shuker is a local fisherman who catches a variety fresh fish from Sark waters. Depending upon the season he lands wild Sark Sea Bass, Mackerel, Sole, Skate, Bream, Mullet, Whiting and Pollock to name but a few local varieties.

Kieran Perrée is licensed to hand dive for scallops in Sark waters. He shucks them by hand on his boat and provides us with excellent fresh Sark scallops on a regular basis. Our Chefs maintain that they are the best scallops that they have ever cooked.

 

 

 

Sark sheep

Dave Scott is a local tree surgeon and sheep farmer. He provides us with excellent quality, locally reared, Sark lamb, hogget and mutton depending upon the season. He has recently been featured in the BBC2 documentary An Island Parish.

 

Gavin Nicolle is a local pig farmer and he supplies us with excellent quality free-range Gloucester Old Spot pork from time to time.

Stocks Hotel on Sark is proud to support local Sark fishermen, farmers and market gardeners. Stocks Hotel aims to try and avoid importing anything into Sark unless it cannot be first sourced from within Sark. This philosophy is vital for the Sark economy and it is also important to minimize our carbon footprint and to limit food miles. We are passionate about using superb first class Sark ingredients, such as Lobsters, Crabs, Scallops, Sea Bass, Dover Sole, Sark Lamb, Sark Beef, Sark Pork, Sark Eggs, Sark Milk and other dairy products.
